Description

Wild rice is an aquatic, high fiber, high protein grain that is also high in niacin and other B-vitamins. It grows in lake beds and river beds in North America, and apparently it dates back 12,000 years. It’s nice to know that our ancient ancestors would recognize this food!

Ingredients

  • 1 teaspoon Olive Oil
  • ½ whole White Onion, Chopped
  • 1 whole Green Pepper, Seeded And Chopped
  • 1 cup Wild Rice Medly (I Used A Mix From Costco)
  • 2 cups Chicken Broth
  • 14 ounces, fluid Canned Diced Tomatoes
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Chili Powder
  • 1 teaspoon Dried Oregano
  • ½ teaspoons Salt
  • ½ teaspoons Paprika
  • ½ teaspoons Garlic Powder
  • ¼ teaspoons Cayenne Pepper

Preparation

In a large saucepan, heat olive oil over medium heat. Add chopped onion and green pepper. Saute until fragrant, then add remaining ingredients. Bring to a boil, then reduce heat, cover and simmer for 30-40 minutes. Remove from heat and allow to sit for 5 minutes. Fluff with a fork and serve!

Nutrition Info per 1/2 cup serving: 163 calories, 2 g fat, 5 g protein, 32 g carbohydrates, 2 g fiber.

This is delicious! I usually add another pepper or two and some chicken sausage. It’s even great heated up as leftovers.

I thought this was a very good, flavorful and simple dish. I work remotely so I made it for an early lunch and plan to serve the leftovers as the side dish for dinner tonight for my boyfriend. I also felt good knowing I was eating something healthy! I think it would also be good with 1/2 a can of kidney beans in it.
