A healthy recipe for Spanish rice!
Preheat oven to 350ºF.
In a large skillet over medium heat, add the rice and vegetable oil. Stir constantly until the rice is a golden brown color. Add the garlic and onions and sauté for an additional 2 minutes.
Add the rest of the ingredients and bring to a boil.
Pour into a 2- to 3-quart casserole dish and bake covered for 20-25 minutes.
