It’s the perfect time of year to dive into some seasonal produce. And what better way than with these Smashed Honey Basil Sweet Potatoes! They’re filled with nutrients and low in calories.
Add chopped sweet potatoes to a large pot with water. Make sure the potatoes are covered. Cook over medium-high heat until soft.
Remove 1 cup of the starchy water from the pot, then drain the rest. Smash with a potato masher until smooth. Use the starchy water to thin out the sweet potatoes if necessary. Add basil, honey, salt and pepper. Serve and enjoy!
