This basic recipe can be adapted by adding ham, cheese or onions.
In a saucepan over medium heat, melt 1/4 cup butter. Once butter is melted, whisk in the flour. Slowly whisk in milk and bring the mixture to a boil to thicken it. Add salt and pepper. Remove pan from heat.
Peel and slice potatoes. Preheat oven to 350 F. Butter a 9×13 pan or other 3-quart casserole dish.
Pour a bit of sauce into the baking dish. Layer potato slices together with ham, onion slices or shredded cheese, if using. Pour remaining sauce over top. Drizzle 1 tablespoon of melted butter over top.
Cover the dish with a sheet of foil and bake for 1 hour. Remove cover and bake 15-30 minutes longer until potatoes are tender and lightly browned.
