This sautéed sweet corn with red pepper and cilantro makes a perfect side for any of your favorite Mexican eats. Burritos, check. Enchiladas, check. Fish tacos? Definitely. And the best news, it’s really easy-peasy. Prep to table in under 15 minutes and eight ingredients (and that’s counting the salt and pepper).
Add olive oil to a stove top pan over medium heat. Add chopped onion and saute until tender and slightly browned, about 5 minutes. Add corn, red pepper, salt, pepper and cumin. Cook for 5–7 minutes until heated through, stirring frequently.
Stir in cilantro and lime juice. Enjoy as a side with your favorite Mexican dish!
