This simple recipe tastes and smells like a difficult, gourmet dish. The truth is, it cooks up with minimal work and can be used in a variety of ways.
Preheat oven to 350ºF.
Slice tomatoes in half and set on a cookie sheet. Slice the top off garlic cloves and set on a pan. Sprinkle with salt and drizzle with olive oil. Roast for 25 minutes.
The tomatoes will be ready to go. To use the garlic, squeeze it out of the cloves.
Blend into soup or sauces, or spread garlic and tomatoes onto a piece of crusty baguette or freshly baked bread. Perhaps with some fresh basil or pesto. The possibilities and flavor combinations are endless!
