Give this super food side dish a try at your next meal. These Roasted Sweet Potatoes & Mushrooms are delicious and nutritious.
Preheat oven to 350ºF. On a large baking sheet, spread sweet potatoes out so there’s room in between them. Drizzle with 1 tablespoon of the oil.
Bake for 10 minutes and pull the tray out of the oven. Add mushrooms and drizzle with the rest of the oil. Season with salt and pepper.
Let the veggies bake for another 15 minutes, then stir. Bake for an additional 10 minutes or until desired doneness. Let rest for a few minutes before moving them to a serving dish.
