A bit of oil and salt and pepper along with sliced fennel, make this a great vegetable side dish.
Preheat oven to 425ºF.
Take fennel bulb, removing fennel fronds (green stuff that looks like dill), and slice off base of fennel. Thinly slice remaining fennel bulb and add to a small mixing bowl. Add oil and season with a generous pinch of salt and pepper. Mix well.
Once oven is heated, place fennel on a baking sheet and spread it out. Roast for about 25 minutes or until fennel is nicely roasted and caramelized. Remove and serve.
The end result is a nice and tender piece of fennel that is somewhat sweet, with a mild licorice flavor.
