Description

As a side or as your entree, simple ingredients have never tasted so good! Bring some traditional Northern Italian flare into your home!

Ingredients

  • 8 Tablespoons Butter
  • 6 strips Bacon, Chopped
  • 1 whole Onion, Chopped
  • 2 Tablespoons Parsley, Chopped
  • 10 ounces, weight Peas, Frozen
  • 5 cups Chicken Broth
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Sugar
  • 2 cups Rice, Preferably Arborio
  • ⅓ cups Heavy Cream
  • ½ cups Parmesan, Shredded

Preparation

Melt 6 tablespoons of the butter in heavy saucepan over medium high heat. Once melted, add chopped bacon and cook until lightly browned.
Add onion and cook until softened. Then add the parsley and stir to combine. Add frozen peas, and 4 cups of chicken broth. Season with salt, pepper and sugar. Bring to a boil and allow to boil for about 2 minutes.

Add the rice and stir frequently. Allow to cook until rice is tender, about 15-20 minutes, stirring and adding a little more broth as needed throughout. You want the rice to remain moist and creamy; you are not trying to eliminate the moisture here.

Once rice is cooked, add in 1/3 cup heavy cream and continue to stir for another 1-2 minutes. Add Parmesan and remaining 2 tablespoons of butter. Serve immediately!
