Inspired by Rachel Ray, perfect paired with fish!
Heat olive oil in sauce pot over medium heat. Add orzo and toast it until golden. Stir in white rice and broth, bring to boil. Reduce heat to low, cover, and simmer for about 20 minutes.
In small bowl, combine tomatoes, onion, jalapeno, cilantro, lime zest, and lime juice. Season with salt to taste. When rice is cooked, fluff with fork and stir in tomato salsa. Serve and enjoy!
