Description

Roasted asparagus, hearts of palm, and halved cherry tomatoes in a soy-based dressing. This makes my heart sing.

Ingredients

  • 3 pounds Fresh Asparagus
  • 2 jars (14.4 Oz. Each) Hearts Of Palm, Drained And Cut Into 1/2 Inch Slices
  • 1 pint Cherry Tomatoes, Halved
  • _____
  • Sauce:
  • ½ cups Vegetable Oil
  • ½ cups Cider Or White Vinegar
  • 1-½ teaspoon Salt
  • 1 teaspoon Pepper
  • ¼ cups Sugar
  • ¼ cups Soy Sauce

Preparation

Steam asparagus till crisp tender. Cool and combine with hearts of palm and tomatoes.

Combine ingredients for the sauce. Pour over the asparagus mixture. Chill for 8 hours.
