A simple fried rice dish. This recipe was given to me years ago by a friend and, hands down, is the most requested recipe I have. Even my daughter’s college-aged friends ask for it. It also makes great leftovers. Serve with your favorite egg rolls, Asian soup, or salad and you’ve got a complete meal.
Fry beaten eggs in oil until firm. Chop up egg as you cook it. In the same pan after egg is cooked, add meat (note it’s already been cooked) and onion; cook over medium heat for 3 – 4 minutes. Add cooked rice. Mix soy sauce with sugar and drizzle over rice. Stir until hot.
Serve with extra soy sauce.
Can also add mushrooms, pea pods, and/or water chestnuts.

Delicious! I made this last night with leftover pork loin and sugar peas. My family loved it. Will be making it again soon! I also used jasmine rice I had made early in the day – then refrigerated. I find doing that helps the rice get a little crispy. Thanks for the post!

I just made this for lunch. What a great way to use up leftover rice and chicken! I used brown rice, and ended up throwing in about a tablespoon of water. It worked out just fine. I will definitely make this recipe again. Yum!
