Kimchi Fried Rice, a tasty way to enjoy brown rice.
Heat oil in a large skillet. Add garlic and stir until fragrant, about 15 seconds. Add rice, kimchi and red pepper paste. Toss well, cooking until rice is warmed through. Add scallions and toss again.Drizzle sesame oil on top. Serve, sprinkled with sesame seeds.

I love kimchi! This recipe is a great and easy way to get some Korean flavor to the table. Next time I will go a little easier on the red pepper paste, lol. And are there any tips out there for how to cook brown rice without it being crunchy? Do I cook it longer or add more water or what? Stovetop or steamer, it always turns out the same, not quite done.
