This is a recipe I got from a coworker a few years back. My husband swears he hates Indian food, but he requests this dish all the time.
Don’t be intimidated by the ingredient list… I promise that if you start the rice first, you can have the whole meal ready in less than half an hour!
Start cooking rice.
Prepare all veggies, and if using, chicken.
In a large skillet, heat oil. If using chicken, cook now and remove to a plate.
Add onion and carrots, stir-fry.
Once onions begin to turn translucent, add corn and cashews. Toast lightly.
When ready, add chilis/jalapenos and cilantro. Heat through.
Add spices and mix thoroughly.
Add rice and mix again.
Take off heat and stir in green onions immediately before serving.
