These potatoes are loaded.
Cook or bake potatoes in skins until tender. Cool, peel, and shred coarsely. Melt butter in a medium bowl or saucepan; add sour cream, onion, and seasonings. Stir into potatoes along with cheese.
Transfer to a greased 2-quart casserole dish, a 9×13 pan, or 2 8×8 foil pans. Bake at 350ºF for 30 minutes or until bubbly and heated through.
Note: Vary the amounts to your taste, using more or less onion or spices.
