Description

These couldn’t be easier to make and are FULL of flavor.

Ingredients

  • ½ Tablespoons Olive Oil
  • ¼ cups Green, Or Red Curry Paste
  • ½ Tablespoons Miso
  • 1-½ teaspoon Agave Nectar, Or Liquid Sweetener
  • 1-½ pound Small Potatoes, Sliced In Half

Preparation

Blend together all of the sauce ingredients (everything but the potatoes) in a large bowl (I use the back of a spoon to mash it together). Toss the potatoes in the sauce to coat, and transfer to a parchment-lined baking sheet.

Bake in a 425ºF oven for a total of 40-45 minutes, shaking/turning roughly every 10 minutes to ensure they don’t burn and are evenly cooked. Serve and enjoy!

These were really yummy and hothothot – well, not that hot. Just the right amount!
I had no Miso or Agave, so I used soy sauce and a sprinkle of plain sugar. Still turned out very good.
The curry paste really burns in the oven, though, so we had to keep peeling burned bits off the potatoes. But that’s really a minor setback.
I’ll definitely be making these again!
