Description

This is an easy and delicious creamy casserole made with frozen corn and fresh Parmesan. There are never any leftovers when this is brought to one of our family gatherings. It’s not Christmas without this dish on our table.

You can mix this up the night before and bake it the next day as well.

Ingredients

  • 40 ounces, weight Frozen Corn
  • 1 cup Cream
  • 1 cup Whole Milk
  • 1 teaspoon Salt
  • 2 Tablespoons Sugar
  • 2 Tablespoons Butter
  • 2 Tablespoons Flour
  • 3 Tablespoons Parmesan Cheese (you Can Add More Or Less Depending On What You Like)

Preparation

In a large pot, combine the corn, cream, milk, salt, and sugar. Bring to a boil and simmer for 5 minutes.

Note: the cream may freeze when it comes into contact with the frozen corn but after a few minutes you can stir it again. I’ve tried thawing the corn first but I think it loses the crisp texture and got too mushy so I prefer starting with frozen corn.

Combine butter and flour in a small dish and stir into the corn mixture. Pour corn into a buttered casserole dish. Sprinkle a little Parmesan cheese on top. Bake for 20–25 minutes at 350ºF.

If making the night before, allow the casserole to come to room temperature (or heat up on the stove) before placing it into the oven. The other option would be to put it into the oven when you turn it on so it warms up as the oven does.

I used a 16 oz bag of frozen corn/brocolli/red bell pepper mixture, and added an 11oz can of SW corn. I halved the other ingredients. It was great!
It was nice finding a corn casserole recipe that didn’t need creamed corn too!

It’s melted butter, and I just stir it all to combine :)

is the butter meant to be melted or softened? do you combine with a pastry blender or other method?

Delicious and easy to make! It was a real crowd pleaser. Very glad to find a recipe without the Jiffy mix. So much better!
