This Creamy Broccoli Cheddar Rice is filled with freshly chopped broccoli, jasmine rice and sharp shredded cheddar cheese! Naturally gluten free and ready in just 20 minutes!
Heat olive oil in a medium size sauce pan over medium heat. Add chopped onion and minced garlic and saute 2 minutes, stirring occasionally.
In the same sauce pan, add the chicken broth and bring to a boil. Add the jasmine rice, cover and reduce heat to low, stirring occasionally. After the rice has simmered on low for 12 minutes, remove cover and stir well. Add in butter, water, salt and pepper, cover and let simmer for 3 more minutes.
After 3 minutes, stir in broccoli. Continue to let the rice cook on low for 4-5 minutes or until broccoli is the desired tenderness.
Stir in cheese and serve.
