Healthy doesn’t mean tasteless. I’m always looking for ways to increase my iron intake and this dish delivers. This five-minute side dish goes well with any kind of meat.
Heat a skillet over medium high heat. When hot add in the olive oil and the onions, cook for 2 minutes. Add in the garlic and cook for 30 seconds. Add in the spinach and saute for 2 minutes.
Reduce heat to low and pour in the heavy cream and cook for 2 minutes. Season with salt, pepper and nutmeg. Top with Parmesan cheese.
