This is my favorite way to fix rice. It goes great with roasted chicken just as well as it goes with a grilled steak.
Saute onion and bell pepper in oil. Add parsley, salt, pepper, rice and chicken stock. Bring to a boil, cover and cook on low for 20 minutes.
I usually add a little extra chicken flavor to my rice by adding about a teaspoon of granulated chicken soup base.

Just realized I’ve been using your recipe and never left a comment to thank you for posting. I love this recipe, even my rice-hating 5 y/o loves it. Last night when I made it I didn’t have fresh parsley so I finely chopped fresh spinach and it was great. Going to try making it into a chicken and rice dish to bake in the oven. Thanks again!
