Description

A little different from the typical broccoli cheese casserole, this one uses crumbled crackers to create a slight “stuffing” consistency. Yummy for Thanksgiving!

Ingredients

  • 3 pounds Broccoli Cut Into Florets
  • 2 pounds Velveeta
  • ½ cups Milk
  • ¼ cups Heavy Cream
  • Salt And Black Pepper To Taste
  • ¼ teaspoons Cayenne Pepper (more For More Spice)
  • 1 Tablespoon Dijon (optional)
  • 3 whole (sleeves) Ritz Crackers

Preparation

Preheat oven to 350 degrees. Place crackers into a large ziploc bag and crush slightly, leaving some large chunks. Set aside.

Plunge broccoli into boiling water and allow to boil for 1 minute. Strain and set aside.

Cut Velveeta into chunks. Throw into a large pot with milk, cream, salt, pepper, and cayenne. Melt, stirring occasionally, until totally smooth. Stir in Dijon if using.

Add broccoli to cheese sauce, then add half the cracker crumbs. Stir to combine, then pour mixture into a buttered 9 x 13 inch baking dish. Top with remaining cracker crumbs, then sprinkle the top generously with black pepper.

Bake for 15 to 20 minutes, or until top is golden brown and casserole is bubbly.

Followed the recipe exactly and it wasn’t creamy. I think it needs 1 cup of milk at least. Tastes good anyway but definitely could be creamier.

This is how my son says Super Awesome. I grew up with broccoli casserole, but I couldn’t find my moms recipe. This is as close as it gets. It’s rich and delicious. I brought this to Thanksgiving Dinner and it was gone. Everyone loved it.

My husband who hates veg’s told my son who was sticking his noise up at this dish…that this is as good as broccoli gets!!!! Yeah!!! Thanks, they both ate it!!

This is rich, decadent, and delicious — exactly what I was looking for as a Thanksgiving side. I am curious to try swapping out the broccoli for yellow squash and zucchini, I bet it would be great as well.
