Description

A delicious forbidden rice salad with fruit and mint.

Ingredients

  • 1 cup Black Forbidden Rice, Cooked
  • 1 whole Peach, Chopped Small
  • 1 cup Blueberries
  • 1 bunch Mint, Torn Into Pieces
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Honey
  • 1 whole Lime, Juiced
  • 1 Tablespoon Lime Zest

Preparation

Mix cooked rice with peaches, blueberries and mint.

In a separate bowl, mix oil, honey, lime juice and zest with a whisk. Pour over rice.

Serve at room temperature.
