Description

A super healthy summer salad with lots of fresh ingredients.

Ingredients

  • FOR THE SALAD:
  • 1 cup Raspberries
  • 1 cup Blueberries
  • 1 cup Almonds, Sliced
  • 2 cups Quinoa, Cooked
  • 2 cups Baby Spinach, Washed
  • ½ cups Crumbled Goat Cheese (or Feta)
  • FOR THE DRESSING:
  • 2 Tablespoons Honey
  • 1 teaspoon Dijon Mustard
  • 3 Tablespoons Fresh Lemon Juice
  • 1 Tablespoon Lemon Zest
  • ½ cups Olive Oil
  • ¼ teaspoons Kosher Salt
  • ⅛ teaspoons Pepper

Preparation

Arrange all salad ingredients in a bowl.

Put all dressing ingredients in a small jar with a tight-fitting lid and shake. Add salt and pepper to taste. Pour over salad and serve immediately.
