A light, healthy peach and tomato layered salad made with all fresh ingredients from the garden. It’s seasoned with fresh mint and thyme and just a drizzle of olive oil.
Layer peaches and tomatoes on a large plate. Top with onion and drizzle with olive oil. Sprinkle with salt and pepper and top with mint leaves and fresh thyme.
Serve immediately. You can refrigerate for a little while, but the peaches will turn color.
