A less-guilty version of homemade mac and cheese, swapping white pasta with brown rice pasta, butter with Earth Balance brand spread, and whole milk with skim milk.
Boil brown rice pasta according to directions.
In a large, deep skillet, melt Earth Balance on medium-high heat. Slowly stir in milk and cream. When milk, cream, and butter start to slowly bubble, turn heat down to medium and slowly add cheeses, 1/2 cup at a time. Stir until mixture thickens. If it seems too thin, add more cream or cheese to desired consistency. Season with salt, garlic, and black pepper.
Drain pasta and dump into cheesy mixture. Stir pasta into the cheese thoroughly, so that cheese seeps into all of the crevices. Enjoy!
