This is a definite keeper for my recipe file. Lamb is one of my husband’s favorites and this recipe makes him drool!!!
Tzatziki: Mix cucumber with 1/2 tsp salt; let stand for 10 minutes. Squeeze moisture out of cucumber and mix with yogurt, garlic, lemon juice and dill.
Burgers: Combine egg, parsley, oregano, salt, pepper, cayenne, cumin and allspice. Mix in lamb; shape into four patties. Pan-fry or grill over medium heat, turning once, until no longer pink inside, about 15 minutes. Serve on buns with tzatziki sauce and any desired toppings.

Ooooo! Captain Picky Iraqi would die for these! He looooves lamb! I’ll have to get some ground lamb the next time I’m at a hallal meat market!
