Chicken, beans, corn, spices … and beer. Mmm …
Spray the inside of a 5 to 6-quart slow cooker. Drain and rinse beans and corn. Layer all ingredients in the slow cooker. Carefully stir to combine.
Cook on low for 4 hours.
Serve with selected condiments: crushed tortilla chips, sour cream, shredded cheese, and cilantro are my family’s favorites.
(I’m not a big beer fan, but this cooks into the rest of the ingredients perfectly. If you didn’t know it was there, you’d never taste it!)
