Description

Pardon me as I wipe my mouth clean; I just inhaled a few too many stuffed dates wrapped in bacon. These little sweet-n-spicy poppers are so hard to resist. Four simple ingredients and you have the perfect party appetizer! I made only 10 because I needed to use up some leftover bacon. But you can adapt to make more!

Ingredients

  • 10 whole Dates, Pitted
  • 3 ounces, weight Room Temperature Goat Cheese
  • ½ whole Jalapeno Pepper, Sliced Into Thin Half Moons
  • 10 pieces (2 1/2 Inch Size) Thick-Cut Bacon
  • Honey For Drizzling

Preparation

Preheat oven to 425 F.

Open dates and stuff each with a bit of goat cheese. Smooth goat cheese with your spoon. Add one piece of jalapeno. Squeeze dates gently to bring everything together. Now wrap each stuffed date tightly with one piece of bacon. Bacon will overlap making a “seam.”

Place stuffed wrapped dates seam side down, on a rimmed baking sheet lined with parchment paper.

Bake at 425 F for 10-15 minutes, or until bacon browns nicely. Remove from oven. Using tongs, transfer to a serving dish. Top each with one more piece of jalapeno. Finish with a drizzle of good honey. Enjoy.

Growing up, my family enjoyed dates as an evening snack next to a cup of tea. But I thought I would take a childhood food to another level. Although dates are good all by themselves, this recipe for stuffed dates wrapped in bacon takes them to a whole new level. Crispy on the outside, melt-in-your-mouth on the inside.
