In my family, it just isn’t Easter without chocolate bunnies and PEEPS® Marshmallow treats! While you can use white or milk chocolate, I found dark chocolate to work best with the very sweet center. You can also dip just the ears or skewer them on a lollipop stick and dunk the whole thing, but I think the bunnies’ shocked expression lends itself nicely to sinking neck-deep in chocolate.
In the top of a double boiler, slowly melt chocolate wafers over simmering water. Set aside. (Note: you can also melt chocolate in a microwave oven. Start with one minute on high. Stir. Continue microwaving at 30-second intervals and stirring until melted.)
Remove PEEPS® Brand Marshmallow Bunnies from the package. Separate the bunnies.
Holding a bunny by the ears, dip into chocolate “neck” high. Swirl and shake to let extra chocolate drip back into the pan. Place on a Silpat- or waxed-paper-lined cookie sheet. Repeat with remaining bunnies. Let chocolate set in a cool, dry place. Do not refrigerate or the sugar will get sticky.
