My mother-in-law makes this dish every year for the holidays and everyone, including the children and picky eaters, LOVES it. It’s a delicious side that is perfect for Thanksgiving!
Cook (I usually boil it or steam it) and drain the squash, then cut/slice it up and set it aside.
Preheat oven to 350º.
Sauté onion in butter until caramelized. Remove from the pan and mix all ingredients together. Pour into a buttered casserole dish and top with the additional Ritz cracker crumbs. Bake for 25 to 30 minutes.
Note: You can substitute cabbage for the squash.
