With it being Thanksgiving this week, I’m going to be making some of my favorite recipes.
The first and most important is the turkey. It’s the guest of honor—without the turkey, what do you have? Just a table full of sides and dessert, which is still delicious, but just not the same.
1. Get out a large roasting pan. You can also use the metal disposable turkey roaster.
2. Mix together Whiskey Steak Seasoning, poultry seasoning and brown sugar together in a medium-sized bowl. Set aside.
3. Get your turkey out of the fridge and rinse with cold water in the sink.
4. Remove the clamp that holds the legs together.
5. Once the legs are free, reach your hand inside the turkey and pull out a small brown bag. This contains organs such as the heart and kidneys. I throw this away.
6. Now turn your turkey around and reach inside the other hole and pull out the neck. I throw this part away, too.
7. Rinse the turkey with cold water again, including the inside.
8. Pour olive oil onto the turkey and rub onto the skin.
9. Get out the large turkey bag and put it into the roasting pan.
10. Open up the bag wide and put the turkey inside.
11. Take a sweet onion and cut it in half. Peel the garlic clove and cut in half.
12. Put onion and garlic inside the turkey.
13. Get your brown sugar mixture and rub it all over the turkey skin. Make sure to get all over, including the wings and legs.
14. Put any extra brown sugar mixture and ginger inside the turkey.
15. Pour chicken broth into the bag, keeping it on the bottom. Don’t pour it over the turkey or all of the seasonings will come off.
16. Close the bag. The bag should come with a special plastic twisty tie. Make sure to close it tight to keep the moisture in.
17. Make sure to move the oven racks as low as possible and put the turkey on the bottom rack. Cook at 350 degrees. The amount of time depends on the weight. Be sure to follow the time table listed on the turkey packaging. I cooked mine for 3 hours. It’s done when the thermometer pops out.
18. Once cooked, take it out of the oven and let cool for about 20 minutes.
