The secret to plump yet ethereally soft matzo balls is in the shortening!
Mix all the ingredients in a bowl and refrigerate for about an hour.
Bring a large pot of water to a boil. Using a scoop or your hands, form matzo balls to the size you desire and drop them into the boiling water. Cover the pot and reduce the heat to medium low. Cook for half an hour, drain and add to your favorite chicken soup.
