Description

Chili Non Carne, a vegan twist on a popular dish. Perfect for chilly spring evenings.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1  Onion, Chopped
  • 3 cloves Garlic, Minced
  • 3  Carrots, Chopped
  • 2  Bell Peppers, Stem And Seeds Removed, Chopped
  • 2 cans Brown Beans, 240g Cans, Drained And Rinsed
  • 1 can Red Kidney Beans, 240g Can, Drained And Rinsed
  • 1 can Diced Tomato, With Juice, 240g Can
  • 1 pinch Chili Powder
  • 1 pinch Salt
  • 1 pinch Cayenne
  • 2 teaspoons Oregano
  • 1 Tablespoon Unsweetend Cocoa Powder
  • 1 Tablespoon Chia Seeds

Preparation

Heat the olive oil in a large pot over medium heat then add the onion and cook until softened. Add the garlic, carrots and peppers, and sauté until soft, about 5 minutes. Add the rest of the ingredients, cover and cook for 40 minutes or more. I think that slow cooking will make it even better.
