Cheesy Corn Casserole

Description
This sinfully delicious casserole is a hit at any holiday event or potluck.
Ingredients
- 4 Tablespoons Butter, Divided
- ½ cups Finely Chopped Onion
- 2 cans (15 Oz. Can) Whole Kernel Corn, Drained
- 1 can (10.75 Oz. Can) Cream Of Chicken Soup
- 1-½ cup Shredded Sharp Cheddar Cheese
- 1 whole Beaten Egg
- ½ cups Sour Cream
- Kosher Salt (light) And Fresh Ground Pepper
- ¼ teaspoons Coriander
- ½ cups Ritz Crackers Crumbled
Preparation
Melt half of the butter and saute onion until soft. Combine cooked onion in a mixing bowl with all ingredients except crackers and mix thoroughly. Pour into a pan sprayed with cooking spray.
Melt remaining butter and combine with crumbled crackers. Sprinkle over the top of the casserole and bake at 350 degrees until lightly browned on top.
