Delicious enchiladas with a simple yet tasty filling of ground beef and refried beans.
Preheat oven to 350ºF. In a large skillet over medium heat, cook ground beef and onion until beef is browned and onion is translucent. Drain fat. Add salt and refried beans and heat until bubbling. Add one cup of cheese and set aside.
Pour a thin layer of enchilada sauce in the bottom of two 9×13 pans. Pour the rest of the sauce into a small skillet and heat over medium low heat until warm. Place a tortilla in the sauce and heat until softened. Add a spoonful of the filling and roll up. Place seam side down in baking dish and repeat until the tortillas and filling are used.
Cover dishes with aluminum foil and bake for 20–25 minutes or until bubbly. Remove foil and top with remaining cheese and cook, uncovered, for 5–10 minutes or until cheese has melted and is starting to brown.
