Description

An addition to my Prime Rib Roast entry, this is a must have! It’s awesome! Served it for the first time last Christmas, and now my in-laws think I’m a saint—or an angel!

Ingredients

  • 1-½ cup Pan Drippings From Prime Rib Roast
  • ¾ cups Red Wine (I Love Beringer's Cabernet Sauvignon, Though Any Red Will Do)
  • 2 cups Beef Stock
  • 3 Tablespoons Unsalted Butter
  • 2 pinches Salt and Pepper, To Taste (optional)

Preparation

Skim fat from rib roast drippings with a spoon. Place roasting pan over 2 burners and heat on medium-high. Add in wine and stock and stir deglaze. Reduce by a third, about 5 minutes on steady boil, stirring occasionally. Turn off heat, add in butter. Season, to taste, with salt and pepper. (The roast drippings may already have enough seasoning, so taste first before you add salt and pepper.) Strain veggies off as you pour this into a serving vessel. SUPER YUMMY!
