Description

Just like the thick hot chocolate we buy in Perugia, Italy! Some may describe this drink as warm chocolate pudding … only better. Try topping it with whipped cream, marshmallows or even a scoop of vanilla ice cream.

Ingredients

  • 1-½ cup Half-and-half
  • 1-½ teaspoon Cornstarch
  • 2 Tablespoons Sugar
  • 3 ounces, weight Bittersweet Chocolate

Preparation

In a small bowl, combine 3 tablespoons of the half-and-half with the cornstarch, whisking until smooth. Place the remaining half-and-half in a small saucepan over medium heat. Bring to a simmer. When the half-and-half begins to bubble around the edges, whisk in the sugar. Whisk in the cornstarch mixture until the half-and-half thickens slightly, usually less than a minute. Remove from the heat and quickly whisk in the chocolate until very smooth. Pour into two cups, topping with whipped cream or marshmallows if desired.

I may have messed this up slightly as mine is lighter in color and doesn’t seem as thick. I used 3/4 of a 4 oz. bar of 60% cacao bittersweet chocolate and the fat free half & half. Still wonderfully delicious and super rich. Guess I’ll need to keep trying!
