I love eggnog and all the choices this time of year make it very hard to not over-indulge. Now that I am an adult who constantly watches my weight and calorie intake, especially at this time of year, I wanted to find a lower-calorie alternative to this favorite beverage.
In a large mixing bowl, mix the vanilla pudding mix, milk, sweetener, cinnamon, nutmeg and rum extract. Mix these ingredients well with a wire whisk for 2-3 minutes. If it becomes too thick, add a little more milk as needed, 1 tablespoon at a time. Taste test for sweetness. If you want it a little sweeter add another 1 teaspoon of sweetener. Chill well before serving. Makes 6 servings.
