Description

This is a fantastic, refreshing cocktail that is simple and perfect for spring!

Ingredients

  • FOR THE THYME AND LEMON SIMPLE SYRUP:
  • 1 cup Sugar
  • 1-½ cup Water
  • ½ bunches Thyme
  • 1 whole Lemon, Rind
  • FOR THE COCKTAIL:
  • 1 ounce, fluid Lemon Juice
  • 1 ounce, fluid Thyme And Lemon Simple Syrup
  • 1 ounce, fluid Bourbon
  • 1 sprig Thyme For Garnish

Preparation

To make simple syrup, add sugar, water, thyme, and lemon rind (thinly peeled with a vegetable peeler with no white pith) to a small sauce pan. Bring to a boil, then turn off heat and let steep for 20 minutes. Strain out rind and thyme. Cool syrup in refrigerator until ready to use.

To make the cocktail, add lemon juice, syrup, and bourbon to a cocktail shaker along with ice. Shake vigorously, then strain into a tumbler filled with ice. Add a stem of thyme for garnish.

This cocktail was good but not great. Not enough thyme flavor, the amount of lemon really overpowers it in this ratio. I have been making it with 1/2 an ounce of lemon juice to tone it down, but I still think its a bit too much lemon. I may make the syrup with just thyme and see if that works better.
