Description

These zucchini brownies are a great way to use excess zucchini from the garden. The butterscotch chips and caramel frosting make these brownies sinful! These bars do not last long in our house.

Ingredients

  • FOR THE BARS:
  • 3 cups Flour
  • 1-½ teaspoon Baking Soda
  • 1 teaspoon Salt
  • ⅛ teaspoons Nutmeg
  • ½ teaspoons Clove
  • ¾ cups Butter, Softened
  • 1 cup Brown Sugar
  • ½ cups Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 2 cups Shredded Zucchini
  • ½ cups Chopped Walnuts
  • ½ cups Butterscotch Chips Or Raisins
  • FOR THE FROSTING:
  • ½ cups Butter
  • 1 cup Brown Sugar
  • ¼ cups Milk
  • 1-½ cup Powdered Sugar, Sifted

Preparation

Mix together first 5 ingredients (the dry ingredients).

Cream together butter, sugars, eggs and vanilla.

Combine the 2 mixtures.

Gradually add zucchini, walnuts and butterscotch chips.

Spread into a 10×15 pan. Bake at 375F for 20-25 minutes.

Frost cooled bars with Caramel Frosting.

To make the frosting, melt butter over low heat in a saucepan. Add brown sugar and increase heat and bring to a boil for 2 minutes. Add milk and bring to second boil. Remove from heat. Add enough powdered sugar to reach a spreadable consistency. Spread onto cooled bars. Then cut and serve.
