This is one of my young children’s favourite recipes to make. There is no baking involved and lots of smashing of cookies with a rolling pin. Perfect school holiday activity!
You can use ready crumbled cookies for this recipe if you wish. Otherwise, you will need approximately 200g of cookies (or biscuits as we call them in Australia). They can be crumbled in a food processor or, as my 4 year old prefers, throw them in a bag and smash them with a heavy rolling pin. Double bagging is a good precaution!
The method is very easy.
Mix all the above ingredients together.
Roll teaspoonfuls of the dough into balls and roll these lightly in more coconut.
Done.
If making these for grownups, using gingernut biscuits is a nice alternative.
