Ingredients

  • FOR THE PINEAPPLE FROZEN YOGURT:
  • 2 cups Fresh Pineapple Chunks
  • 2 cups Greek Yogurt
  • ½ cups Granulated Sugar
  • FOR THE MACERATED BERRIES:
  • ½ pounds Fresh Strawberries, Sliced
  • 1 Tablespoon Granulated Sugar
  • FOR THE WATERMELON SODA:
  • 2 cups Fresh Watermelon Chunks
  • 1 Tablespoon Fresh Lime Juice
  • 1 Tablespoon Granulated Sugar
  • 1 cup Seltzer Water

Preparation

For the pineapple frozen yogurt:
Add pineapple chucks into a food processor and grind until smooth. Pour pineapple puree into a bowl, along with the Greek yogurt and sugar and whisk together until combined. Add mixture into an ice cream machine and churn according to manufacturer’s instructions.

For the macerated strawberries:
Add sliced strawberries to a bowl and sprinkle granulated sugar on top. Let it sit for about 20 minutes until juices are released.

For the watermelon soda:
While pineapple frozen yogurt churns, add watermelon into a food processor and grind until smooth. Pour melon puree into a bowl through a sieve to remove seeds and solids. You should have about 1 full cup of watermelon juice left. Next, stir in the lime juice and sugar. For each soda, add 1/2 cup of watermelon juice to 1/2 cup of seltzer.

To assemble the floats:
Add scoops of frozen yogurt into glasses. Spoon sliced strawberries over the yogurt then pour watermelon soda over the scoops and serve.
