Description

Simple and tasty cake. My children call it a squirrel. Moni.

Ingredients

  • 1 teaspoon Butter
  • 5 teaspoons Bread Crumbs (Less Or More If Desired)
  • 2 cups All-purpose Flour, Divided
  • 4 whole Apples (Peeled, Seeded, And Shredded Using A Medium-fine Grater)
  • 4 whole Medium Eggs, Separated
  • ¾ cups Sugar
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ cups Oil
  • 1 cup Walnuts, Chopped Finely
  • ⅓ cups Cranberries, Dried

Preparation

Preheat oven to 390ºF (200ºC). Grease a rectangular cake pan thoroughly with the butter. The best pan is 9”x13”. Sprinkle sides and a bottom with the bread crumbs.

Add 1-2 teaspoons of flour to the grated apples. Stir and set aside.

Separate egg whites from egg yolks. Beat the egg whites with sugar using an electric whisk for about 5 minutes, until you have a smooth mixture. Add yolks, mix to combine. Add remaining flour, baking powder and baking soda. Mix to combine. Slowly pour in the oil while mixing. Stir in walnuts and apples.

Pour the batter into the prepared pan. Sprinkle with the cranberries.

Bake for about 30 minutes. Cool before serving, then taste.
