This recipe is adapted from my friend Gina’s blog on her website (see related blog post). She writes: “You may be shocked by the main ingredient: AVOCADO! But trust us, by the time you have finished you won’t even remember you have put them in! The avocados replace the cream and the oily taste normally put into mousse by milk products. It makes for a healthy and creamy vegan dessert.” I’m not even a vegan and I just love it.
Slice each avocado open and scoop out the insides. Place the insides in a food processor or blender.
Next add the agave nectar, vanilla, and cocoa powder. Blend or process the mixture until fully blended. The mixture should be smooth and the color of chocolate.
You can instantly serve the mousse, however we recommend chilling it in the fridge for at least an hour.
Serve in cups with fresh fruit or mint. Some favorite fruits to add are strawberries, raspberries, bananas, and sometimes pineapple. Enjoy!

thanks for the info belladonna! I didn’t know those things about Agave Nectar and wonder if sticking with regular sugar would be better?

Awesome idea and this sounds like a great recipe! One thing to note for people trying to follow an entirely “raw” diet is that Agave Nectar is a highly processed food with little in the way of regulations. It is often 100% falsely labeled as raw, probably because raw can also be taken to mean that impurities are still present.
The agave is very starchy and requires a lot of cooking to become sweet and syrupy. Amber agave nectar is simply the same product as the regular stuff, but it has been burnt. It has NO proven health benefits and if you do a little research you will find that Agave Nectar has a very high glycemic index, so people watching their blood sugar levels should use caution and monitor their sugar closely when using this product.
Not trying to poo-poo anyone, because the recipe sounds really tasty. I’d serve it to my vegan friends any day. I just wanted to share my information on a fad product that carries so much disinformation about it. I can’t believe they sell it in health stores.
