I had a ton of vanilla beans and wasn’t sure what to do with them. So I decided I would make rice pudding. Normally I would have just used vanilla extract but since I had a ton of vanilla beans, why not use that instead? Turned out great!
Bring water and rice to a boil. Reduce heat to a simmer until all water is absorbed. Add butter, sugar, and milk. Slice the vanilla bean in half and scrape the seeds out. Add the seeds and the half vanilla bean pod. Simmer on medium-low until rice is tender and milk is absorbed, leaving 2-3 tablespoons of milk. Remove vanilla bean and enjoy!

this is great. I added 1 small container of vanilla pudding just for extra creamyness.
