Description

Unbaked gluten-free cookie sandwich: Mac-n-Mint Cookie Sandwich!

Ingredients

  • ½ cups Coconut Flakes
  • ½ cups Almond Flour
  • 3 teaspoons Vanilla Extract, Divided
  • 9 Tablespoons Agave (or Maple Syrup), Divided
  • 2 Tablespoons Chocolate Chips
  • 1 whole Avocado
  • ⅓ cups Coconut Oil
  • 1 teaspoon Mint Extract
  • 1-½ cup Macadamia Nuts
  • ½ cups Water, Plus Extra To Soak Macadamias

Preparation

For the cookies:
In a food processor mix the coconut flakes, almond (or any nut) flour, 2 teaspoons vanilla, 3 tablespoons maple syrup, and pulse together.Then add in chocolate chips and add a little water or more maple syrup if needed. Roll out and cut into circles and set in the fridge.

Mint filling:
Place avocado, coconut oil, mint extract, 4 tablespoons agave, and fresh mint leaves (these are optional) in a blender and blend till smooth and thick. Set aside.

Mac-nut butter:
Place macadamia nuts and soak in some water for an hour. Then rinse and place in a blender with the remaining 1 teaspoon vanilla, 1/2 cup water, and the remaining 2 tablespoons maple syrup. This will get thick. Adjust sweetness to taste.

To build, take cookies out and layer with a mint avocado layer then top with mac-nut butter and finish with another cookie. May enjoy as is, or place in the freezer.
