Vanilla wafer lollipops gilded with caramel and dipped in chocolate—need I say more?
Make your favorite caramel recipe or melt down some purchased caramel according to the package directions. Place your vanilla wafers flat side up on a cookie sheet. Be sure to leave room for the lollipop sticks. Dollop some melted caramel on the back of each cookie. Then go back and place a lollipop stick on top of each cookie, embedding it into the caramel. Add a little more caramel on top of the stick, to really anchor it. Allow the caramel to set.
While your caramel is setting, melt your chocolate discs in a microwave safe cup. Melt the chocolate at 50% power in 40-second intervals, stirring well after each until the chocolate is smooth and void of lumps. Now dip each cookie into the chocolate. Tap the lollipop stick on the side of your cup to remove excess chocolate. Place each cookie caramel-side down on a parchment-lined cookie sheet. Garnish with sprinkles if desired. Place your sheet of cookies into the refrigerator for a few minutes to set the chocolate.
After the chocolate has set, you can drizzle with melted white chocolate if desired.
