Description

Finally! A cookie cake that is actually cake-like! All the taste of classic chocolate chip cookies with the texture of a cake. Serve with a glass of milk and a smile.

Ingredients

  • 2-¼ cups Unsifted Flour
  • 1 Tablespoon Baking Soda
  • 1 teaspoon Salt
  • ¾ cups Granulated Sugar
  • ¾ cups Brown Sugar, Packed
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Pumpkin Pie Spice
  • 1 cup Butter Or Margarine, Softened
  • 1 teaspoon Vanilla Extract
  • 2 whole Eggs
  • ½ cups Warm Water
  • ½ cups Vegetable Oil
  • 2 cups Semi-Sweet Chocolate Chips
  • 1 cup Chopped Nuts (optional)

Preparation

1. Preheat oven to 375 degrees F.

2. Mix flour, baking soda, salt, sugar, brown sugar, cinnamon, and pumpkin pie spice. Set aside.

3. In a separate large bowl, mix butter, vanilla extract, eggs, water, and vegetable oil until smooth.

4. Add dry ingredients to the creamed mixture, and beat with an electric mixer on low speed. Add chocolate chips and nuts and beat through until it’s nicely homogenized.

5. Pour mixture into a pan at least 10″ x 10″. You don’t want it too deep so it keeps the “cookie” quality. I used a medium sized pizza pan.

6. Bake at 375 degrees F for about 35 minutes. The edges should be a lovely golden color, and the middle will be a bit soft and springy to touch.

7. Enjoy with a big glass of milk!
