When the weather starts to get cool and fall is in the air, it is time for the smell of apples and cinnamon. This is a moist and delicious apple cake.
Set oven to 325 degrees.
Spray a 10 inch tube pan with vegetable spray.
Mix the 3 Tablespoons of sugar and 1 teaspoon of cinnamon together and put into tube pan and turn so that the entire surface of the pan gets coated with the sugar mixture. Set aside.
Beat oil and sugar, add eggs.
Stir in apples and vanilla.
Sift together the flour, cinnamon, baking soda and salt.
Add this to the apple mixture and mix well.
Add pecans and raisins. This will be a stiff dough.
Place into tube pan. Spread to even out batter. To make sure that there are no air pockets, drop pan on counter from about 3 inches up…..you can do this a few times.
Bake 1-1/2 to 1-3/4 hours. Let rest in pan about 30 minutes prior to turning out onto rack to cool.
I usually just throw all ingredients into the KitchenAid to make.

huge hit at our house this weekend.
It got better on the second day, like the apples had time to release their juices and make the cake even moister.
I will def. make this one again!

Tasted great! It was super moist and a huge hit at brunch.
The only thing I was confused about was whether the recipe calls for baking soda or powder. The ingredient list says one and the directions say another.
