A moist, easy to make fruit cake. Always a crowd pleaser! This recipe makes 2 cakes. This freezes well, so it hardly seems worth halving the recipe to make just one! You need to soak the fruit overnight, but remembering to do that is about the hardest thing to do.
Mix the dried fruit and sugar together in a large bowl. Pour over the hot tea, stirring to dissolve the sugar. Cover and leave overnight.
The next day, stir in the flour and the egg. Beat until smooth. Divide between 2 x 2 pound loaf tins.
Bake at 190 Celsius for 1 – 1.5 hours.
Cool before serving in slices. Delicious on its own … or slathered in butter.
